The weather in Dubai has been quite strange. We should ideally be experiencing hot days, but strangely the temperatures are fluctuating. We have cool morning on certain days, sometimes rains, dust storms and on some days are just hot and humid. It’s certainly nice to wake up to an unexpected cool morning, so I am not complaining. Nevertheless I am preparing for the hotter months.
I love quenching my thirst with lemon juice after hot day outdoors. Nothing could be more refreshing. Attached to lemon is a whole lot of health benefits (you can read more about it here). I bought 2 dozens lemons, and prepared a lemon concentrate syrup which can be stored in the refrigerator. It just takes a minute to prepare the drink. In a glass add 2 tbsp or more of the lemon syrup and fill with water.Add couple of ice cubes and stir, and garnish with mint leaves.
Extract lemon juice from all the lemons and measure. For a cup of lemon juice you will require two cups of sugar and a cup of water. In a saucepan, add the measured sugar and water and boil until all the sugar is dissolved. Add the grated ginger to the sugar syrup and let it cool. When the sugar syrup has cooled completely, add the lemon juice and stir well. Store in a glass bottle and refrigerate.
Note: if the lemon is quite sour, add the more sugar syrup to balance it out.
