Cucumber Cape Codder

The past week was really busy,Mr. S celebrated his birthday on the 5th. We spend the day quietly and saved the fun for the weekend. Friends were invited over for an evening of ‘Good food and Wine’. I  love planning the menu, and get stressed about it in the end :D. But this is the first time i finished the planning, preparations and had enough time to finish my cake before everyone arrived. Had a beautiful night to remember.

Menu: Drinks – Cucumber Cape Codder, and for appetizers  Devils on Horseback, Stuffed Mushrooms, Mashed Potato bake, Baked fries.

I came across this recipe at the Martha Stewart website. I fell for the presentation, have never tried a cucumber based drink. The drink is absolutely refreshing. I doubled the original recipe and adjusted the quantities a little.

Ingredients 

Sugar- 2 cups
Water- 2 cups
Cucumber; grated- 3 nos
Cranberry juice-1 litre
Fresh Key lime juice; small- 6 nos
Vodka- 18 ounces
Ice; for serving
 
Method

Bring sugar and water to boil in a saucepan, and let it simmer until the sugar melts. Remove from heat, add the grated cucumber to the sugar syrup and let it cool. Pour through a fine sieve and discard the solids. Chill the syrup.

Combine cranberry juice, fresh lime juice, vodka and syrup. Serve with ice; garnish with cucumber wedges.

Note: Just skip the vodka, to make it non-alcoholic
