This was the result of lack of time to cook dinner because i was already so very hungry when i got home. I wasnt sure what to cook, i had some leftover baby potatoes from the weekend burger night (yeah! we eat unhealthy during the weekend, so much for all the exercising and diet control during the weekdays) and really fresh broccoli calling out to me. I pulled out my wok, stir fried the potatoes, some onions garlic and broccoli with some spices and Voila! it was lip smacking yummy. The whole process of preparation and cooking took me under 30 mins, just in time before my stomach decides to abuse me. I loved the skin on potatoes, and this was crunchy on the outside and perfectly cooked in the inside. I paired this with wholewheat Rotis and yoghurt
IngredientsBaby Potatoes- 180gms. Broccoli- 100gms. Shallots- 40gms; sliced Tomato- 1no.; medium size Curry powder-1 tsp Turmeric powder-1/4 tsp Salt to taste Vegetable oil- 2 tblsp. Cilantro leaves- for garnish Method
In a large wok, heat vegetable oil. Turn the heat to medium high and fry the halved baby potatoes (leave the skin on); it will take around 10-12 mins (until the potatoes are cooked on the inside). Add the sliced shallots and stir it until the onions turns translucent. Add the spice powders, tomatoes and salt. Add couple of tblsp. of water to deglaze the wok. Stir for a minute and then add the broccoli, fry for another minute and transfer to a serving dish. Add cilanto leaves for garnish. Serve it with warm rotis.
