I have always wanted to attempt making kebabs, but some how kept putting it off. This has to be one of those easy recipes to whip up for dinner and they can also be prepared much ahead of time and just be frozen until ready to use. I used my oven to grill them, which is definitely the healthier option. You can also fry them on a non-stick pan with little oil. To go with this I prepared a tahini sauce (which is just store-bought tahina , yoghurt, salt, pepper, paprika and a drizzle of lemon juice) and pita bread (which i will be posting sooner).
Ingredients
Mince meat- 400gms
Onion, finely chopped- 1 medium
Garlic- 3 cloves
Ginger-1 inch
Egg- 1 no.
Coriander leaves; roughly chopped- a bunch
Paprika- 3/4 tsp
Pepper; ground – 1 tsp
Cumin powder- 1/2 tsp
Salt- to taste
Bread crumbs- to bind
Finely mince garlic, ginger, coriander together. Combine with rest of the ingredients. Soak bamboo skewers in water for 10- 15 mins Take a handful of meat mixture and shape it as a kebabs around the skewers. At this stage the kebabs can be frozen, and be used later.
Grill the kebabs and serve hot with tahini sauce and pita bread.
